The Aerodynamic Trim
Trim the cold brisket. Remove the hard, dense white deciduous fat from the pocket between the point and flat. Shape the brisket into an aerodynamic oval, rounding off any sharp corners. Trim the top fat cap down to a uniform 1/4-inch thickness.
